Erin L. Andrejcak, 37, of Amherst, NY, passed away on January 3, 2024 at Millard Fillmore Suburban Hospital in Amherst, NY after a long and courageous battle with Diabetes and Crohn’s Disease.  Born in Lewiston, NY, she was the beloved daughter of Michael J. (Joan) Andrejcak and Anna M. Sneddon, and granddaughter of Richard (Dorothy) Andrejcak and Dolores ‘Nana’ Sneddon.

Erin was a 2004 graduate of Niagara Falls High School.  She later earned her Bachelor’s Degree from Niagara University in Sports Management in 2008.  During that time, Erin did internships with both the Buffalo Bills and Bisons. She then went on to complete her Master’s in Business Administration from Canisius College in 2010.  On September 14, 2013, Erin married the love of her life, Brandon R. Biskup.  Erin was employed in sales with PepsiCo in Buffalo, NY from 2010 until 2018.  Most recently, she worked for Marmon Food Services in Equipment Sales from 2021 until the present.  Erin was heavily involved in Niagara PAL and was the 2003 Kiwanis Peach Queen.  Erin’s love for hockey started when she was five years old and never ended. She played for Grand Niagara Hockey, NFHS Hockey and played travel hockey with the Niagara County Coyotes.  She was small but fierce as any former opponent can attest to.  Erin also played soccer for the Niagara Police Athletic Travel team, NFHS and was the Captain for the NFHS JV team in 2001.  She spent a significant amount of time teaching her niece Henri how to play soccer only to be deflated when Henri chose dance.

Anyone who knew Erin also knew that her love for family was immense and unconditional.  Her bond with her sister was unbreakable and although she drove her brother crazy, she was always his big sister.  Erin was fortunate enough to grow up in a very close family surrounded by a great- great- grandmother, a great grandmother, grandmothers, grandfathers, aunts, uncles, and cousins.  Her circle of seven cousins growing up made for a lot of laughter, chaos, a few broken bones, and a lifetime of memories which continued well into adulthood for all.

Erin was a great friend to many and maintained those friendships, some starting from grade school and middle school, throughout her adult years.  It was hard not to like her; the infectious laugh, her quirky personality and humor were very hard to resist.  When Erin was right, she was right…and when she was wrong, she was also right…simply because it was just too exhausting trying to argue against her and we just gave up.  Her hobbies included: DIY projects, having make-overs from a five-year-old, snuggling with her “niecey,” endlessly falling asleep in a bowl of mac & cheese as a child, stretching the limits of her family’s patience with her insane tardiness to functions and she was an impressive compulsive shopper.  Erin’s closets, (Yes, plural) would be the envy of any high-end department store in this country…perhaps the world if we included footwear.  And her beauty supplies could fill a small outlet mall—she was that good.

Erin became a Type 1 diabetic at nineteen years old and unfortunately, was plagued with several autoimmune disorders due to that.  She struggled with these health issues for almost half of her life and yet, maintained her beautiful smile and positivity through it all—Erin was the most graceful warrior and an inspiration to so many.  To say that she fought hard would be an immense understatement but every battle must end and her tired little body determined that.  The loss is immeasurable but the love for her is infinite.  And in a last act of selflessness, Erin was an organ donor because it was her wish to not only help others, but to provide research so no one would have to suffer as she did.  The world has truly lost a beautiful soul but the world was also better because she was in it.

In addition to her parents, grandparents and her husband of 10 years, Erin is survived by her siblings, Christina M. (Paul) Henderson and Zach A. (Jessie) Andrejcak; her sister-in-law, Lauren Biskup; her nieces and nephews, Vondin, Holdin, and Henri Henderson, Zoey Andrejcak, Shane, Jordan, Melody and Savannah; many aunts, uncles and cousins; her mother-in-law, Maria (late Robert) Biskup, her beloved dog, Jagger, as well as many friends.

Visitation will be held on Monday, January 8 from 2 – 7 PM at M.J. COLUCCI & SON NIAGARA FUNERAL CHAPEL, 2730 MILITARY ROAD, NIAGARA FALLS, NY 14304, where closing remarks will begin at 7 PM.
