Today’s recipe is nice and easy, and one that packs well for a picnic, and it’s easier to make than you might think.

You will need:

  • 1 package refrigerated pie crust
  • 2 Apples, granny Smith
  • 2 T. Unsalted butter
  • 1 T. Granulated sugar
  • 1/4 t. Ground cinnamon
  • 1/4 cup powdered sugar
  • 1 T. Water or milk

Pull pie crust out of refrigerator, let it warm up some. Grab a 3″ cutter, and cut out circles, if no cutter, you can use an inverted drinking glass to cut your circles. Put aside.

Meanwhile peel, core, and dice apples into small pieces, place in a bowl and toss with the granulated sugar, and cinnamon. Place a small frying pan on stove add butter, turn to medium to melt butter, when melted add tossed apples, and saute, 3-4 minutes, remove from heat and let cool.

Take pie crust circle, and put a tablespoon of filling into center of crust, brush edges with some water, and layer another piece of pie crust on top and crimp with a fork, brush top with water and sprinkle with cinnamon sugar. Continue doing that with rest of filling and pie crust. Yield: 12

Preheat oven to 350,  bake 10-12 minutes until golden brown. Remove to wire rack until cool. Mix the powdered sugar and water together and spoon over pies, let set, and enjoy.
