One of the things that I have recently rediscovered is grilled/oven roasted vegetables. Believe me if they are done right they are fantastic and very colourful and healthy. Eaten alone, as a side to a meal, in a wrap as a sandwich or as a grilled vegetable platter, you just can’t go wrong.

This time I did oven roasted zucchini with tomatoes. I took 2 zucchini and rough chopped them, and added 3 tomatoes, chopped, put them all on a sheet pan. Roasted them in a 400 oven for about 20 minutes until they got nice and caramelized and served them on the side with meatloaf and mashed potatoes.

  • 2 whole zucchini, chopped
  • 4 tomatoes, core removed and chopped
  • 2 cloves of garlic, chopped
  • 1/4 cup balsamic vinegar
  • 1T kosher salt
  • 2t. Freshly ground black pepper

I put all the vegetables on the sheet pan and then poured the vinegar, and spices and tossed everything with my hands. Roasted it in the Oven and served it on the side of my dinner. Of course on the way I ate several pieces. It was great.

 
My husband and I had also purchased some cheddar cauliflower if you have never tried it, please do so it is fantastic.
 
Remember keep an open mind, and an open heart and enjoy what the land gives you. Don’t be afraid to try new recipes there are no failures just ways to learn how not to do something.
