It’s that time of year again, the weather starts to cool, the leaves start to turn into all those beautiful colors, and the meals turn into comfort foods. With Halloween being in a couple of weeks, I thought I would share an easy comforting soup that you could make for Halloween to get the kids fed and out the door quickly.

  • 3/4# cheddar or gruyere cheese, shredded
  • 2 c. Whole milk
  • 1 c. Cottage cheese
  • 1/2 t. Salt
  • 1/2 t. Black pepper
  • 3/4 t. Nutmeg
  • 1/2 # macaroni elbow uncooked

Preheat oven 375. Grate cheese and set aside. In a bowl, blend milk, cottage cheese and spices. In a large bowl combine pasta, cheese, and milk mixture. Pour into a buttered 9 x 13 pan and top with crushed Ritz crackers. Bake for 30 minutes covered and then uncover and bake for 30 more minutes, until pasta is cooked and bubbly.

This recipe is real easy to do and can easily be prepped and set up the day before. Also you can change out the cheese or add a different one to your liking, a lot of people do not like cottage cheese but trust me you can’t even tell. If you like you can do sour cream or Greek yogurt.

Also if you want you can add some pre cooked vegetables to make it more healthy.
