Summer time, yeah, I know several of you are excited for summer, and all the family time you get to have, best part of that are the picnics and BBQ’s in the summer. So when you are planning your menus, make it fun, and one of the best way to do that is vary the dessert menu, with a selection of them, one of my favorites believe it or not is sugar cookies because there is so much you can do with the recipe. So here is my basic sugar cookie dough.

  • 2 1/4 cup flour    1/4 t. Salt
  • 2 t. Baking powder

Sift all together and set aside.

  • 1/2 c softened butter
  • 1 c sugar
  • Cream together
  • 2 eggs, beaten
  • 1/2 t vanilla

Then add to the creamed mixture, fold in the dry ingredients, when all mixed I added 1/4 c rainbow sprinkles.

Put the bowl in the fridge for 30 minutes.

Sprinkle some flour on your counter top, and roll out to 1/8 thick, and use a nice summer cookie cutter or various ones to use. Cut and place on cookie sheets, bake in 350 oven and bake 8-10 minutes until  lightly browned around edges. Let cool and decorate. Here is ones I made for our Memorial Day weekend cookout.

I used a dinner knife to make the scores in the cone, basic white icing for the ice cream, and rainbow sprinkles for decoration, that is why I also put them in the batter. Try something different, don’t be afraid to experiment, it’s a lot of fun.
