It’s beginning to look like spring, the snow has the melted, the flowers are starting to show and the grass is beginning to grow. The rebirth of the year is here at least that’s how I see spring because it brings new life to everything including you and me.
   

With it being Easter this weekend and all the wonderful celebration this weekend. I thought that I would provide you with a nice and light quick bread that you could serve with your Easter meal. A key lime bread. It is very easy to do has a nice refreshing taste and will compliment your meal nicely, and also if you have extra it’s great to have a slice for breakfast.

Key lime bread

1 c sugar
1/2 c shortening
2 eggs
1/2 t salt
1 t baking soda
2c flour
zest and juice of 4 limes
1 box instant cheesecake pudding mix
2 T. milk

Preheat oven to 350

Grease or spray 1 large loaf pan and set aside

Cream sugar and shortening together until creamy, add the eggs until incorporated. add in the zest and juice of limes. Then add all your dry ingredients including your pudding mix and mix until combined, and then finally add your milk and mix and pour into prepared pan. Bake at 350 for 50 – 60 minutes until a toothpick inserted in the bread comes out clean. cool in pan 10 minutes and then remove from pans and let cool completely. At this point if you want you can make a powder sugar glaze to strip across the top of the loaf and sprinkle with a little of reserved key lime zest.

1/4 c powder sugar
2 T milk

mix and strip across the loaf. If you want the glaze looser add more milk stiffer add more powder sugar.

As you can see in my picture I made individual loafs because I gave them away as Easter gifts to my friends. Happy Easter everyone. He has risen.
