What a great use of leftovers.

  • 2 cups leftover mashed potatoes
  • 1 egg
  • 1/2 cup Parmesan cheese
  • 2 cups Italian bread crumbs
  • 1 egg with 2T water
  • 1 cup flour
  • 2 cups shortening

Take leftover mashed potatoes, add the one egg and Parmesan cheese, mix. Take 2T of mix and flatten out, and place on a sheet tray, when you have them Ali formed refrigerate for 30 minutes.

Make your egg wash, and put in a bowl, put the flour in a separate bowl, same with the bread crumbs.

Take the mashed potato patties, dredge in the flour, then the egg wash, and finally in the bread crumbs. Remove and place on a clean tray until ready to fry. After all patties are breaded, melt the shortening and fry each pattie in 350 oil until golden brown, about 4-5 minutes per patty. Sprinkle lightly with salt when you remove from fryer and serve.
