All right 4th of July is just around the corner. What is everyone cooking? Well I haven’t figured out what we are doing in our house yet, except I am going to show my munchkin how to make rice Krispy treats, which I just love. I will take some pictures and post them with the next column. But for this week I have an awesome chicken wing recipe for you. I can’t take credit for it, But we tried it the other day and all I can say was yum. The one difference I made was, we cook them in the air fryer instead of deep frying them. If you don’t own an air fryer it is really something to look into. I love mine and it allows me to have more fried food.
 
If you choose to use your air fryer follow the guidelines for yours, if you are going to use a deep fryer make sure you use fresh oil and its preheated to 350 and don’t over crowd your fryer. The wings need to move around freely and not touch one another.

  • 2 1/2 # chicken wings
  • 1c maple syrup
  • 2/3 c chili sauce
  • 2T lime juice
  • 2T dijon mustard
  • 3/4 c all purpose flour
  • 2t salt
  • 2t paprika
  • 1/4 t black pepper

Cut wings into 3 sections, discard the wing tips, although I put mine in a freezer safe bag to make stock. In a large saucepan, combine the syrup, chili sauce, lime juice, and mustard. Bring to a boil cook until liquid is reduced to about 1 cup.
   
Meanwhile in a shallow dish combine the flour, salt, paprika, and pepper. Add wings a few at a time and toss to coat.
 
Place your wings in air fryer and fry them for 12 to 15 minutes until crispy, pull basket at half way and shake and replace and continue until done and skin is nice and crispy. Toss them in the sauce to coat and garnish with sliced green onions and fresh lime wedges if you like.
   
If you are going to deep fry follow same directions except fry them in oil that is 375 for 10 to 12 minutes until crispy and toss to coat.

They are delicious and a different take on your traditional chicken wing. Happy 4th of July.
