This week we are talking about breakfast, one of my favorite meals of the day. There is so much you can do for breakfast it’s one of the reasons I love it so much. You can go simple with a plain bowl of cereal, drink it with an awesome smoothie, or keep it classic style with bacon and eggs.

But not today, today we are doing a rolled French toast, that is filled with smashed bananas, cream cheese, sugar , and cinnamon.
 
Filling:
8oz cream cheese, softened
2 ripe bananas, mashed
1/4 cup granulated sugar, can use brown sugar if you want, it will give you a richer flavor
1/2t ground cinnamon
Mix all this together and set aside.
   
French toast batter:
4 eggs, scrambled
2 cups half and half
1t vanilla
1/2 t ground cinnamon
1/4 t ground nutmeg
1/4 c brown sugar
Mix this all together and set aside
   
Assembly: per order
2 slices of white bread with the crust cut off and rolled thin almost like a piece of paper. Now how much this recipe yields depends on how much filling you like in your rolls.
   
Take 1 piece of rolled white bread, spread on 2 T Of filling per slice of bread and spread it out to cover the whole piece of bread. Roll it up like a jelly roll and set aside. Once you use up all the filling you are ready for the next step. Are you going to pan fry it or deep fry it, if pan frying it, melt butter in your fry pan, dip your French toast rolls in the batter and pan fry, turning to fry all sides golden brown. Remove from pan, drain and serve with warm syrup.
   
Now if your going to deep fry them, which is what I did, heat the fryer until its 350. Dip all your French toast rolls in the batter and let them set for 5 minutes, and then put them in the deep fryer and cook until golden brown. Serve with some warm syrup. Yummy.
   
This is a recipe that is very different, not real sweet, nor really greasy. If you want you can make a big batch of these and freeze them and then cook them whenever you want them. Yes those 2 rolls on the plate are the French toast even though they look like egg rolls.
