Hi guys.

This weeks recipe is for a has brown casserole, it is a perfect dish to take to a Sunday potluck dinner or even a BBQ, mainly because it makes a lot, and travels and heats well. Plus it taste great.

It is one of my holiday staples all year round.

  • 2 bags frozen hash brown potatoes
  • 1/4 c vegetable oil
  • 2 T. Kosher salt
  • 1/2 t. ground black pepper
  • 1Tt. granulated garlic
  • 1 T. paprika 
  • 1 8 oz package shredded cheddar
  • 2 cups sour cream
  • 2 eggs
  • 4 each green onions

Take the first six ingredients and mix together in a bowl, spread them out onto a cookie sheet that has been sprayed with cooking spray and cook them in a 325 oven for 30 minutes. (What you are doing by doing this is cooking the raw taste off of the potatoes plus giving them a little color.) When they are golden brown, remove them from oven, each oven cooks differently, so the 30 minute time is just a guide. Place on a rack on the counter to cool. When cool place in a bowl and add the rest of ingrdients, and mix well. Spray a 9 x13 pan, and place the mixture in there, leveling it out with your hand or a wooden spoon, and bake for 40 minutes. When time is up, pull it out of the oven, and top with extra cheddar cheese and green onions. Enjoy.

Variations: You can use a different flavor of cheese or mix them if you want, instead of sour cream you can replace that with plain yogurt.Want a little heat add in 2 cups of salsa, you pick the heat of that.

Always remember that when it comes to cooking a recipe is just a guideline, you are in control of the flavor profile. Dont be afraid to make a mistake it is just food.
