This week we are going with a little bit of Latin flavor. The dish has a lot of flavor, and the meat is very tender, due in part to the marinading time and the lemon juice. The acid of the lemon juice helps to break down the protein of the meat making it more tender.

  • 1# chicken, I used drumsticks

Marinade:

  • 1t  kosher salt
  • 1 clove of garlic, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lemon, zested and juiced
  • 1 cup sofrito

Mix all ingredients for the marinade in a bowl, add chicken, and let it marinate for 30 minutes to an hour .

Remove chicken from marinade and place in oven safe pan, I used 9X9 pan, that has been sprayed with cooking spray.

Place in a preheated 350-degree oven, and bake for 45 minutes, or until the internal temperature reaches 170. Let set 5-10 minutes to let the juices settle. Serve and enjoy.
