For me, cooking dinner on the nights I work is all about easy,and there is nothing easier than making it all in one dish. To begin with the prep is pretty easy, cooking time relatively quick, and clean up a breeze. So here is a nice one-dish meal for you.

  • 1# smoked sausage, sliced
  • 2 green peppers, sliced into strips
  • 1 onion, yellow cut in half and sliced
  • 4 potatoes, your choice, cut in half, sliced thin
  • 1/4 c olive oil, you can use vegetable oil
  • 2 T. Season salt

Cut all your vegetables, and smoked sausage and put aside. In a large frying pan, place the oil in there and turn the heat on medium high, once the pan is warm add your thinly sliced potatoes, and fry them until crisp, add your vegetables, cooking and stirring for a couple of minutes, then add your seasoned salt, and smoked sausage. Cook until sausage is heated through, about 5 minutes, and then serve. I always serve this with bread, because I like to wipe up the juices.
