Spring time and warmer weather are just around the corner, and as such so are those lighter meals and bbq’s. Here is a nice salad, that’s a little different from the everyday.

Broccoli Salad

  • 2 crowns of fresh broccoli, washed and cut into small pieces
  • 1/2 red onion, finely chopped
  • 1/2# bacon, cooked,cooled, and chopped
  • 1c dried cranberries
  • 1/2 c toasted almond slices
  • 2c mayonnaise
  • 1/2 c powder sugar
  • 1 T apple cider vinegar

Wash, and cut into small pieces your broccoli crowns, add onion, bacon, cranberries, and toasted almonds. In a separate bowl add mayonnaise, powder sugar, and vinegar, whisk together to make the dressing. Pour dressing into the other bowl and mix to combine. Let set in fridge 2 hours, mix again before serving.
